The Sully Saint-Germain hotel is situated in the Latin Quarter, on the left bank, in the heart of Paris' oldest district where first constructions began in 1202, during the Middle Age (476-1453).

Maurice de Sully (1120 – 1196) was bishop of Paris. He decided the construction of Notre-Dame (1163).

Maurice de Sully was son of a poor woodcutter from Sully-sur-Loire. He was noticed by ecclesiastic authorities. In 1159, he was nominated canon of Paris Cathedral. The year after, he was put in charge of the diocese where he stayed for thirty-six years. Following Suger, constructor and priest of Saint-Denis, he undertakes to give the capital a cathedral worthy of the name : Notre-Dame.
